Industri roti merupakan bagian dari industri makanan jadi yang memanfaatkan tepung terigu sebagai bahan baku utama dalam proses produksinya. Salah satu industri roti yaitu UD. Rachbini. UD. Rachbini merupakan perusahaan yang bergerak dalam produksi roti yang memiliki beraneka macam rasa, bentuk dan harga. Banyaknya jenis roti yang diproduksi, kebutuhan dan ketersediaan berbagai jenis bahan baku merupakan hal yang perlu diperhatikan. Oleh karena itu dilakukan penelitian dengan tujuan untuk memaksimumkan keuntungan penjualan produk roti dengan menggunakan metode linear programming. Kendala yang ada dalam penelitian ini yaitu kendala ketersediaan bahan baku roti, kendala kebutuhan waktu tenaga kerja, dan kendala permintaan produk roti. Hasil diperoleh dari penelitian ini yaitu keuntungan yang diperoleh sebesar Rp.15.988 untuk 6 jenis roti per satu unit roti. Jenis roti sus bebek memberikan keuntungan sebesar 0%, pastel sebesar 14,50%, kepang sebesar 0%, tarcis sebesar 11,67%, sus bekry sebesar 53,38%, dan bolem sebesar 20,45%. The bread industry is part of the food industry that utilizes wheat flour as the main raw material in the production process. One of the bread industries is UD. Rachbini. UD. Rachbini is a company engaged in the production of bread that has a variety of flavors, shapes and prices. The number of types of bread produced, the need and availability of various types of raw materials are things that need attention. Therefore, a study was conducted with the aim of maximizing the profitability of the sale of bakery products using the linear programming method. The constraints in this research are the constraints of the availability of bread raw materials, the constraints of labor time requirements, and the demand for bread products. The results obtained from this study are the benefits of Rp. 15,988 for 6 types of bread per unit of bread. The type of sus sus duck gives a profit of 0%, pastel of 14.50%, kepang of 0%, tarcis of 11.67%, susry sebesar 53.38%, and bolem of 20.45%. Keywords: Linear Programming, LINGO, Sensitivity Analyst
