[ Anotasi Abstrak ]

Deskripsi Lain

Temulawak (Curcuma xanthorrhiza roxb) is a plant that contains high levels of curcumin and xanthorrhizol. Temulawak contains bioactive compounds which have many benefits, but tends to be susceptible to degradation due to environmental factors such light, oxygen and temperature. Encapsulation can be an important solution to protect compounds from degradation, thereby maintaining their stability and efficacy during storage and consumption. This technology, apart from being able to maintain bioactive components, is also able to maintain flavour. The coating used in these ginger microencapsules is sodium alginate. Sodium alginate is used to stabilize mixtures, dispersions and emulsions, which is related to its gel-forming properties. Spray drying was chosen a method in the encapsulation process because of its efficiency in producing homogeneous and stable micro-particles. However, to achieve optimal efficiency, optimization of various parameters such inlet temperature, alginate concentration, and feed flow rate in the spray drying process is required. The aim of this research is to determine the appropriate optimization of the encapsulation process for ginger extract using the response surface method using a spray dryer machine. Based on the results of this research, it can be concluded that the analysis using response surface methodology (RSM) with central composite design (CCD) obtained the recommended model for processing data for each response, namely the quadratic model. The optimal formulation solution from the software obtained formulation results, namely a combination of a feed rate of 5 ml/menit, an encapsulant mass of 1 gram with an inlet temperature of 120 (C°). Based on this solution, it is predicted that it will produce encapsulation with an antioxidant response value of 59.88%, curcumin of 2.94%, flavonoids of 23.75% and granules of 6.09 (μm) with a desirability value of the solution of 0.844 84.4%.
