ABSTRAK Nilai tambah adalah pertambahan nilai yang terjadi karena suatu komoditi mengalami proses pengolahan, pengangkutan dan penyimpanan dalam suatu proses produksi. Tujuan penelitian ini untuk mengetahui besarnya nilai tambah ditinjau dari keuntungan yang diperoleh petani dan margin antara jagung mentah dengan hasil olahan jagung. Berdasarkan hasil dari analisis metode Hayami terhadap produksi Pak Rifai menunjukkan bahwa nilai tambah dari olahan jagung dilihat dari keuntungan yang diperoleh petani adalah Rp 2.673,00. dengan tingkat keuntungan sebesar 86,24 persen, jumlah ini cukup besar dari skala usaha yang ada. Marjin ini merupakan selisih antara nilai produk dengan harga bahan baku jagung per kg, tiap pengolahan 1 kg jagung diperoleh marjin sebesar Rp 5.235,00. yang didistribusikan untuk setiap faktor yaitu pendapatan tenaga kerja langsung 8,15 persen, sumbangan input lain 40,78 persen, dan keuntungan perusahaan 51,07 persen.
